Each part of the shot releases different solubles as it runs, which can vary in color. When making a ristretto, the change in color and ingredients, while an espresso shot is pouring are the most obvious.

As with all great food and drink recipes, success begins with fresh, high-quality ingredients. FSANZ (Food Standards Australia New Zealand) considers coffee to be a fresh food, and it should be treated and purchased as such. This means buying fresh roasted coffee beans from your favorite coffee roaster. Roasters withhold beans for at least five days after roasting to give the flavors time to develop. This means that consumers have only a maximum of 4-5 weeks in which to enjoy their coffee. Never buy coffee beans without a date for roasting them.

* How to store your roasted coffee beans

To get the most flavor and shelf-life out of your beans, you must store them just as you would fresh food. As with other food products, coffee beans are also affected by environmental conditions. Moisture, ultraviolet sunlight, heat, and oxygen are all environmental factors. When not in use, it is important to store them in an airtight, cool, dark, and dry place.

Throughout their shelf-life, coffee beans slowly lose gasses. Gases (mostly CO2) are used to transport our acids, sugars, and oils. It isn’t easy to get good coffee solubles through the water without a gas. The gases will escape almost instantly when the coffee is ground, which reduces flavor very quickly.
