The Walichu and Kudhumi coffee varieties

Ethiopian landraces include the Walichu, also known as Welichu and Wolishu, and Kudhumi coffee varieties (also called Kurume). According to World Coffee Research, a landrace is a “domesticated, locally adapted, traditional variety of a species of animal or plant that has developed over time, through adaptation to its natural and cultural environment of agriculture and pastoralism, and due to isolation from other populations of the species. Most landrace coffee varieties come from Ethiopia’s forests, where C. Arabica developed through human-led domestication. “They are usually associated with high-quality cups and low yields.”

Walichu has a large canopy with a tall height, which is most common in the Gedeo Zone, while Kudhumi stands out for its small stature.

Wolichu Wachu Washing Station, Ethiopia

It is located in Oromia, Ethiopia’s Guji-growing region. The Harso Haru Mude Farmer Cooperative was established in 2017. The cooperative, which was only recently constructed, has been able to incorporate new commercial insights into its construction. This allows for more efficient and sustainable processing of coffee. The station’s layout allows for maximum efficiency in processing and drying. The pulping machine is located at the top of the gentle hill, with fermentation tanks, washing channels, and the pulping machine below. The setup of the station allows the coffee to be moved by gravity instead of pumps, as in older washing stations. This station has a large and well-organized dry area at the bottom.
