Caturra Coffee Varietal & Natural Green Bean Process

Caturra, a dwarf mutant of the red Bourbon with short internodes, was discovered in Brazil’s Minas Gerais state between 1915 and 1918. Its fruit and leaf characteristics are similar to Bourbon varieties, and it can produce either red or yellow cherries. It is susceptible to all the main diseases and pests, but it is also highly productive.

In 1937, the Instituto Agronomico of Campinas in Brazil began making selections after Caturra was discovered. Caturra was selected because of its small size, which allowed plants to be planted closer together. It also had closely spaced branches, which enabled it to produce more fruits in the same area.

In the 1940s, it was introduced to Guatemala, but its widespread commercial adoption did not occur for another 30 years. It was first introduced in Guatemala and then spread to Costa Rica, Honduras, and Panama. It is now one of the most important coffees in Central America. In fact, it’s often used to test new cultivars.

The natural process (also known as the dry process) involves drying the cherries in the sun. The bean is meant to absorb more flavors from the fruit. The cherries are dried until the moisture content is between 10-12%. After that, the beans are separated from the cherry. This method uses a lot less equipment than the washed method.
